Chhurpi Soup
The Chhurpi is made from cow or yak milk. The dish is a little sour in taste and the mild white cheese gives the texture to the dish. It can also be made from butter milk. Chhurpi is prepared in a local dairy or at home from buttermilk. The buttermilk is boiled and the solid mass that is obtained is separated from the liquid and wrapped and hung in a thin cloth to drain out the water. It is soft, white, and neutral in taste. However, it is often left to ferment a bit to acquire a tangy taste. Its soup is prepared with oil, paanch phoran, onion ginger, tomatoes, and salt. Then garnish with coriander leaves and serves hot with cooked rice. It is a fine source of calcium, phosphorus, magnesium, zinc, vitamin A, vitamin D, vitamin E and all the B vitamins too
